Chicken Chili with Barley
- 3/4 cup barley
- ** plus 2 cups water or broth from poaching chicken
- 3 cups cooked chicken (You could use either Chunky Seasoned Chicken or Perfect Poached Chicken)
- 1 onion, chopped
- 2-3 cloves garlic, minced
- 16 oz tomato sauce
- 16 oz chopped tomatoes (stewed Mexican style)
- 4 oz chopped green chilies
- 11 oz can corn
- 14 oz can chicken broth
- 1 tbsp chili powder or more
- 1 tsp cumin
- 1 can kidney or black beans
Cook onion and garlic in oil in large stockpot. Add all ingredients and simmer until liquid is cooked down. Add flour to thicken if necessary.
